Dinner Menu, Indoor Workouts, Ideas From YOU, etc.

I'll start with the first item on this rather non-creative post title: Dinner Menu. It's just my husband and myself for now so planning healthy dinners for 2 can sometimes get tricky. We are pretty much guaranteed to eat out at least once a week so I tend to keep that in mind when weekly planning. Here's what our menu consists of this week:

Sunday: Shrimp Tacos, Brown Rice, Black Beans
Monday: Baked Seared Chicken, Corn on the Cob, Green Beans and Avocado Topping
Tuesday: Carnitas Tacos, Brown Rice, Black Beans
Wednesday: Pork Tenderloin, Corn on the Cob, Green Beans
Thursday: Tilapia, Squash, Green Beans
Friday: Out
Saturday: Start New List and Shop Accordingly

Want the recipes? Sure ya do! Here they are in order:

Shrimp Tacos: http://cleananddelicious.com/2011/01/22/shrimp_tacos-2/

Seared Chicken: http://shrinkingjeans.net/2009/08/seared-chicken-with-avocado/ (I bake the chicken)

Carnitas Tacos: http://www.eatliverun.com/crock-pot-beef-carnitas-tacos/

*Those are the only 3 that I have a recipe for. The rest are just tried and true from yours truly.

Next little topic: Indoor/At-Home Workouts. I. Am. Obsessed! Don't get me wrong, I love a good run/walk or C25K excursion, but I live in Texas and let's be honest, it gets hot here. It's only almost May and I can't even get ready to go somewhere without sweating my ass and makeup off.

Some things I've been doing or am planning on doing especially during the months to come:

  • The Squat Challenge: I am loving this thing! I'm up to 80 squats and my ass doesn't look like said ass below, but I think I can tell a difference in my thighs when I wear shorts-the back part that turns into butt cheek? You know? I'm going to keep them going. I can do them watching T.V. too!
  • 10-Minute Arm Workout: I LOVE this video! Did you see my little baby bicep in a couple posts back? This video breezes right on through and I do it in the comfort of my living room. Love it.

  • Ab Challenge: I haven't found one that I just LOVE the sound or looks of yet...Let's be honest, I'd rather stub my toe than do a sit up, but I want to work it in there. I'm hoping to find something a little like this:
  • Yoga/Stretching: I have never been into Yoga. I don't dislike it, but I'm not a flexible person-sorry honey-and I just think it takes so long. I don't necessarily want to get all into Yoga or whatever, but I do know I need to do stretching and that's something I'm researching now and will let you know what I find at a later date. Do you have a stretching schedule or specific routine? Please share!

Last, but certainly not least...Ideas From YOU!!!! What the heck do you want to hear from me? I need help with blog post topics people. I would probably write/post more often if I knew what the heck to talk about. I would also love to hear what your favorite healthy meals are. Breakfasts, lunches, dinners, snacks....all of it! I think that networking is such a powerful tool so let's all share ideas and learn from each other!

I'll leave you with some pictures. Here is a face-shot comparison photo from when I was at my heaviest and present day:
Yikes. I better not ever allow myself to get back to that chick on the left. *Shudder to think about it.* Here is a picture of my sweet Bluebird recovering day 3 post surgery:
Little baby angel, isn't she? She's doing really well! I saw this on Pinterest, of course, and couldn't pass it up:
I don't know about you, but I get so caught up in comparing myself to others' progress/body type and I let myself forget about my own progress! Have a great day everyone. As always, thank you for reading!

  1. 1st of all- so glad your little pup is doing okay! Our dog is like our baby, so I know how it would feel to have them hurt like that. So terrible.

Secondly, I would love to just hear about your day. What is your schedule like? Maybe take us through a typical day. Also- does your husband eat healthy? Has he noticed a change in you?

  3. Thanks Nichole! I'll be honest-I'm not too sure...when I was at my heaviest-238, I noticed a change after about a month-but I knew I still had a long way to go, but it was all SO gradual over a couple of years. The biggest change happened last summer. I had lost the weight but still had extra pounds and was just sloppy. Last summer I did 30 Day Shred and ran/walked-alternating days. That alone-in the Texas summer heat made a world of different. Now, I have about 10 more pounds I'd like to lose, but won't be devastated if it doesn't happen. I'm just trying to maintain by running/walking a couple days a week and doing weights/squats.
